So about a year ago I joined this new club. Over the year, I have found that it is fairly easy to garner a membership. This not so exclusive club is known around the country as the “I Have a Picky Eaters Club”….and I promise you, I am moving up the ranks to President of this club thanks in large part to the campaigning of my son River.
Chicken Nuggets? – Nope, I’m a picky eater.
Macaroni and Cheese?- Nope, I’m a picky eater.
Pasta of any kind? -Nope, I’m a picky eater.
Carrots?- Are you kidding me mom?
Celery and peanut butter? -You can leave the peanut butter, get rid of the rest. I’m a picky eater.
As a mom, this membership comes with a lot of initiations. You have to do the hide the spinach under the cheese on the pizza dance, the ol’ if you dont eat your dinner you don’t eat tango, and my personal favorite the Look How Mommy Does It jazz routine.
But today folks, I’ve hit the lottery.
Listen, the BEST, I mean the BEST thing you can do for you kids is to get the best nutrients possible into them. Whole fruits. Whole veggies. I’m not sure that many people would fight me on that. But doing this can be a FIGHT in and of itself. (Some body out there better be yelling “PREACH!”). For our family, we have found what works for us, Juice Plus. We’re talking 30 BETTER THAN ORGANIC fruits and veggies every. single. day. It lets me, as a mom, breath a little easier when I am doing the vicious battle of the wills because I know my children are getting the nutrients they need.
Today I thought up a little snack for my kids, crossed my fingers, and guess what… THEY DEVOURED IT. Here’s all you need:
1 organic red delicious apple
whole walnuts; chopped
fresh shaved coconut
dark chocolate mini chips
agave or raw honey
Begin by taking a sharp knife and cutting the apple into round “apple chips.” Remove whatever seeds may be there. Next assemble your Apple disk. Sprinkle a little bit of coconut and mini dark chocolate chips on each slice. Next, chop your walnuts and sprinkle those on as well. Finish by drizzling your agave or raw honey across the top. AND THATS IT.
Bon Appetit kiddos!
